Hello Again!

Hello again!  Two days in a row, I am impressed!  I tell you it’s been an act of congress to sit and type out a post…… but here I am!!!!

Our dinner last night was a new recipe!  It’s a new favorite.  It’s so good I am making it again next week!  I still have most of the ingredients, so in order to streeeeeeetch our grocery budget we get to have it again!!!!!  Holla!  No complaints over here! It’s a skinny version of Chicken Spaghetti clocking in at only 216 calories per serving ~ 1 cup. *****Edit! 261 Calories**** Sorry the picture isn’t very pretty but in my experience the grosser the food looks the better it tends to be!

This was the first time I tried this K-Cup and I LOVE it.  When I was first pregnant with Aidan, one of the only things I wanted was a Chai Tea Latte from Starbucks.  The taste took me back to those lovely days!

It was another good day!


I am sorry for the lack of food inspiration today.  I skipped breakfast because I was busy getting the boys ready for school, myself ready for my bible study and helping Jeremy get the cats ready to go to the vet!  I did get a few bites of fruit at church and I am proud of myself for completely ignoring the 4-5  dozen donuts, cake, muffins, chips, dips…..etc..

Jeremy took BOTH of my geriatric cats to the vet this morning….GOD BLESS that man….so I could go to the Beth Moore bible study at our church.  When I say that this woman moves me….it is an understatement.

It is for the next 6 weeks on Wednesday mornings, which is so perfect because Wednesdays are my days off from working out!

When I got home from the study I was HANGRY and headachy…..not a good combination…..


I was really trying to be nice.  After all I DID just come from church AND my darling husband took the cats to the vet which qualifies for Sainthood in my opinion.

I had the same lunch as yesterday, a Spark around 3pm, some Greek yogurt, and a piece of Jamie’s protein bread, and have yet to eat dinner!  Something’s never change!!!!

A few months ago, a blog I like to read called “The Gracious Pantry” asked readers who have lost weight and kept it off for at least 1 year to submit their story.  So I did!  She chose my story as one of 5  featured on her blog! The Gracious Pantry is a clean eating recipe website.  She has lost a lot of weight herself by eating clean.  She shares tons of delicious healthy recipes, talks about her son “Mini-Chef” and sometimes share weight loss struggles of her own.

I guess it’s about time

that I finally post something!  It’s been a full summer thus far but I think it will be slowing down here in the next week or so.  Luke is going to be going to his dad’s for the month of July beginning Friday so it will be just me and Little A most of the time after that.

Last week the boys went to stay with Jeremy’s parents for the week.  On Monday we met at Chili’s, had lunch (I got a cup of the Chicken Enchilada Soup, so YUM) and then we drove back to Dallas…..alone.  It was so quiet that it was just plain weird.

We had planned to get some things done Monday afternoon when we got back into town but I was so tired by the end of the drive and had a headache from reading in the car.  All I wanted to do was lay down.  So I DID!  It was glorious!


Tuesday we got to go somewhere that I had been wanting to go for a really long time.  The last time I went to the Allen Outlets was a few years ago and I only got to go into one store.  Jeremy and I made a day of it and got there first thing!  We shopped around a while, finding nothing and getting hungry so over lunch I devised a plan of attack!

I circled and labeled all the stores I really wanted to go to and when we got back we started on one side and worked our way to the other.

FINALLY,  I found the first of many purchases at Kenneth Cole.  I love the tagline on their shopping bag….Everyone Needs an Outlet.  Yes, and shopping is one of mine!  Thank goodness for Jeremy’s sake I am a bargain shopper.

I couldn’t believe I found these, they look almost exactly like my ones from Target!  These are better because my Target ones don’t have the braid over the ankle and my heel slips off the back when I walk.  These feel much better made although I have a blister on my big toe now.  It’s ok…they are cute enough to endure the pain!  Winking smile

I asked for no tomato and mustard instead of mayo….I guess they heard no tomato sub lettuce, no mayo sub lettuce.  Either way it was really good!  I ate half the soup and half the sandwich and it was a perfect portion for me.  I hate the huge portion sizes they serve at restaurants.  It’s so hard to leave half on my plate even though I KNOW that even just half is usually too much.  I think every time…..such a waste, there are people starving.

I think the original name was “I Want to Marry Ryan Banks” but I guess they changed it at some point.  Good move, I want to marry Ryan Banks is cheese.

I LOVED this movie!  I love it so much I want to buy it!  It was adorable and honestly, who doesn’t love Bradley Cooper?  If you don’t, you should see someone.  I want to watch it again.

This was REALLY good.  I ate half the oatmeal,  half the croissant and all of the fruit.  It was perfect and filling.

Then we caught the matinee of Snow White and the Huntsman.


Love, love, loved.  It was freakin loooooong but I had no clue.  This says a lot because I have the attention span of a 5 yr. old.  I think Kristen Stewart did a great job.  Clearly she has had some acting lessons since her Twilight days.  Charlize stole the show for me though.  Evil Queen indeed!

I had on a cute top under this jacket….but since I get cold if its 85 degrees and there is a breeze, I turned into a fashion DON’T before our movie.  Good thing we were in a dark theater.

We decided on lunch at the Chick-Fil-A in the mall.  It was 2 pm and I was getting hangry.  So I figured it would be a good idea to get something quick.

We found a sunny spot to thaw out under and enjoyed lunch.  I got my usual side salad with fat free honey mustard.  I added all the sunflower seeds and croutons.  This time I decided to add my fruit cup on top instead of eating it separately.  I didn’t like it as much…I don’t like the honey mustard on my fruit.  I think I will do this next time but change my dressing to the vinaigrette.

Jeremy made me do it…..but really, it was inevitable.

I didn’t eat it ALL…..just about 3/4!  It was REALLY good, but as expected not as life changing as I had imagined.  I could totally make this at home and in fact, have made something like this before with plain M&M’s, granola, raisins, and some sort of cereal.

That night I got to watch the week’s episode of Dallas!!!  I am so excited to have a new show to watch!!!  I never really get attached to a series because I never have time to watch them.  But this is appointment television for me!  Scandalous!  I vaguely remember the show from when I was little, but I want to buy the original series and watch all of them!!!


I can’t really remember what we did Friday, but I DO remember dinner!

In Time

In Time

Great storyline, just waaaaaaay toooooo long.  I fell asleep but was rudely awoken several times by sounds of gunshots. Thumbs down  I’d recommend it, just know it’s really long.

I just remembered what I did Friday. Confused smile DUH!  Jeremy worked his extra job so I had the day to myself!  I slept in late, cleaned the house a little and then went to exchange some things from Ulta & Target.  By Friday I was REALLY missing the boys.  I was honestly sort of depressed.  It’s funny because when I said goodbye to them on Monday, I thought….gee I am not sure 5 days will be long enough.  Clearly….. I needed a break.  By Thursday I was getting pretty bummed and by Friday I was just depressed.  I really missed my little boys.  It was so incredibly quiet Friday morning.  The energy they give off is tangible.


Finally FINALLY it was time to go get them!  The drive there seemed endless.  We met again in Abilene and ate lunch a Chili’s.  I had the chicken enchilada soup again!  So YUM!!!!

I am so glad they are back.  We all slept late this morning and had a great day today!  Fussing, complaining, fighting and all!  It was music to my ears. Tomorrow is back to reality and a regular schedule.  I hope the treadmill doesn’t kill me after a week of ignoring it!

My old new car!

I just have to share how excited I am that I have my old new car back.  I got a new car about a year and a half before Aidan was born and I barely got to drive it before I got too big for it.  It is a little two door sporty type car and I LOVE IT!  I had to give it up for Jeremy’s larger car and had been driving it since. The other day when I went to Ulta, I drove it because Aidan had practice and I wasn’t sure if I would be back in time.  I have driven it a few times in the past few years but something dawned on me that afternoon.  I could start driving it again!  Aidan is no longer in a bulky car seat so that wasn’t the main issue anymore.  I proposed the idea to Jeremy and of course he was all for it!  He hated driving it.  I on the other hand, am so excited to have it back!  It’s MUCH easier for me to drive and navigate because it is smaller.  I have terrible depth perception and would purposely park super far away so I didn’t have to deal with trying to nudge my way into a parking spot.  My water bottle that I take everywhere with me actually fits in the cup holder, not the case in the other car.  It has a lot of other features that are just awesome and I remember why I picked that car out of all the other ones.  It may not be a new car, but it sort of is to me!!!!

I finally slept well Thursday night, never mind that I woke up at 4:50am….ten minutes before my alarm went off.  I count that as a win because at least it wasn’t 4:20, or 4:22, or 4:19 like it has been.

Breakfast was the usual and right before I left for the gym I had the other half of my banana.

My workout was GREAT!  I planned on an hour of cardio, but wasn’t sure if I would do my usual half and half (half treadmill/half elliptical) or if I would do the entire hour on the elliptical.  Turned out I did the entire hour on the treadmill.  When does THAT ever happen?  I found myself full of energy and feeling great.  I ended up doing a workout that looked like this:

I think I ended up completing just under 5 miles.  4.8?  Side note:  It may have gone by so quickly and effortlessly because the lady next to me was keeping me highly entertained.  I am not sure where she was in her head, but she was singing and dancing to Pretty Girl Rock while I was getting set up.  Not sure what else she was listening to after that, but she was a pretty good dancer!  Maybe it was her energy rubbing off on me.

When we left the gym, I had a few errands to run that would keep us out through lunch, so I was sure to pack some snacks.

As always, Friday night was Pizza Night for the boys so I made something that ended up being a combination between nachos and Frito Pie.

1 serving Baked Tostitos, 1/2 cup Hormel Vegetarian Chili, ~ 1/8 cup reduced fat shredded cheese. 100% delicious and very filling!

Then I ate countless chips w/ salsa.

Today we have a soccer game and pictures.  I am going to get a Shred workout done this afternoon and then hopefully I can settle down on the couch and start Catching Fire!  Have a LOVELY weekend friends!!!

Still Sore

Aidan requires his back to be massaged every night before he can go to sleep.  It’s a terrible habit that I started a long time ago and just can’t seem to break it.  Anyway, I fell asleep for 2 hours in his bed Thursday night while I was doing that.  When I woke up I felt like I had had a nap and was wide awake for the next 3 hours.  I think I finally fell back to sleep around 1am.  Getting up at 5 am Friday morning was not happening.  I ended up sleeping until almost 8am when Aidan came in and told me it was morning time!   Thanks dear-heart!

I was still incredibly sore from Wednesday’s workout so I decided to skip the gym in favor of some active recovery.  Shopping!


Before we left, I ate a Z-Bar and grabbed a Vitamin Water. Thankfully, those held me over for a while because we shopped through lunch!

Cary’s English Toffee


We went next door to Payless to see about a certain pair of boots.  I had gone in about 2-3 weeks ago looking for the perfect pair of nude wedges.  I am not a fan of heels, but I think wedges are adorable with shorts and dresses.  I did not find any wedges, but I found an incredible pair of riding boots on sale.  They were normally $60, but marked down to a random $31.  I have been really wanting a pair of riding boots this year, but I have a hard time paying more than $50 for shoes unless they are running shoes.  I also have a hard time buying things out of season.  I resigned myself to the fact that riding boots and I were not meant to be this year & maybe I could ask for them on my next birthday.  After trying them on, rejoicing over the fact that I could zip them up over my calves (long story from my chubby days), & marveling at how comfortable they were, I put them back on the shelf.  Crying faceBroken heart I thought, “I will come back in a few weeks.  If they are still there it’s a sign and I will get them.”  Well guess what?


There they were, waiting for me after all this time!

Whew!  Today was a whirlwind!  I can’t believe its already this late.  I am currently waiting on the boys to return from soccer and then make dinner.  The quiet is so lovely.

I was disappointed because I had high hopes for the chocolate peanut butter addition instead of regular.  I was hoping it would taste like an oatmeal cookie with chocolate chips.  I LOVE this stuff on bread,  bananas, stirred into yogurt, smoothies…  but here it just didn’t add anything special.  Bummer.  Thumbs down


I did my leg workout today plus my ab challenge.  I had every intention to post the leg workout today but didn’t get a chance!  Soon I promise! I also wanted to go run this afternoon, but didn’t get to that either!

Jamie’s Pumpkin Spice Pancakes, eggs, & turkey bacon

I spread 1 tsp. of all-natural peanut butter on the pancake.

These pancakes are REALLY good.  I expected them to be a little sweeter, but then again regular pancakes aren’t really sweet, until you add a topping.  I loved the addition of peanut butter to these.  Syrup or jelly would be nice too.  This batch makes 10,  so I have some leftover batter for actual breakfasts this week!  Thumbs up

I apologize for the crummy picture but I was too hungry to wait for one that was pretty.  I am excited about our DATE DAY tomorrow!  No movie planned.  We have to take our doggie to the groomer and take my car in for the repair work.  Maybe I will get to sit in Barnes & Noble for hours reading gossip magazines.  One can dream!

Break Fast

It took me a long time to start eating breakfast. I still have a hard time “eating within an hour of waking” as the professionals suggest.  I have my coffee first thing and then it never fails that I am sufficiently hungry two hours later.  I used to have only coffee when I got up, starve my way through the morning and then allow myself to have a small lunch because I knew I needed to “save my points” for the afternoon when I would inevitably be famished.

When I started working out at the gym in the morning I found myself feeling really tired, slightly nauseated and not able to work out as hard as I did at home.  One morning Jeremy suggested I try a banana before I worked out.  My workout was so much better that day, so I tried it again the next day and the next.   I am now a breakfast eater!  I have found that the reason I was so famished in the afternoon was most likely due to the fact that my breakfast was not substantial enough or the wrong combination of foods to benefit me later.  I was also not keeping my blood sugar levels even by skipping that all important mid-morning snack.  Then my poor excuse for a lunch would never be enough to keep me fueled for the rest of my day.  I had heard over and over again to eat breakfast but I just blew it off because that did not work for me.  I wish I had realized that its incredibly important to have the right amount and balance of carbs, protein and good fats to keep your body fueled until the next pit stop.

Now I have my oats every morning


This morning I ate a bit more than my usual combination.  With the way my schedule is today,  I want to make sure I don’t go into that terrible state of HANGRY again.



1/3 c. old fashioned oats

1/2 c. unsweetened coconut milk

1 tbsp natural peanut butter

1 tsp chia seeds

1/2 of a small banana

I have found that I am much more satisfied in the afternoon when I have this type of breakfast.  It is also to important for me to eat a small snack of protein and good carbs right after my workout or within about 3 hours after breakfast.  The key is to eat real whole foods as close to the earth as possible and enough of them so your body has something to work with all day.
