7th Anniversary!

Yesterday was my 7th wedding anniversary with the most incredible man I have ever known.

I was SO excited to go to the gym yesterday morning.  I made it to my first Spin Class!  I loved it.  I was very much out of my comfort zone.  I had no idea what to do with that bike.  It was unlike any other bike I have ever been on.  The instructor was awesome; showing me how to use it but I still have some learning to do.  At first I had the gear too easy, then it was too hard.  I felt like I was going to pass out at one point!  But I got the hang of it by the end and I am looking forward to going back!


When I got home I intended on having a snack, showering and then having a real lunch.

It was perfect.


I was starving again this morning.  I had a huge breakfast which I guess was good because I didn’t have another opportunity to eat until almost 4pm.

I am incredibly exhausted just sitting here.  Jeremy had to go to a meeting at work this afternoon so when he gets home, I am hoping I can go to bed super early tonight.  Like 7 pm early!  9-10 hours of sleep sounds gloriously divine!


My favorite kind of day

I was up at my usual time this morning thanks to a fantastic nights sleep.  By 7am I had had my quiet time and coffee and was ready to start the day.  The rest of the house was still fast asleep so I decided I would eat a banana and go for a 5 mile run.

My run felt incredible!  It was gorgeous this morning.  I tried my best to take it all in because I know my days of running in the morning are numbered.  By 8 am I was a sweaty stinky mess. I could have gone for an additional 2 miles but I knew I still needed to eat breakfast and get ready for our outing later.

Weight Watchers Chicken with Fresh Tomato Sauce, 1/2 cup Brown Rice, & 4 oz. Moscato

This was SOOO yummy!  I wasn’t crazy about the chicken as usual, but the rest of it was so wonderful.  I gave Jeremy half of my chicken and ate all the rest.

Then I had two pieces of Jamie’s bread….this batch will not last long! Winking smile

I had such a wonderful day today.  Full of my favorite things.  A really good and long quiet prayer time, coffee was superb, an exceptional run, fun with little A, baking, cooking a healthy meal for my guys, and I will end it with some reading….as long as I can keep my eyes open! We have a long day planned for tomorrow so I better try to get in bed ASAP!

Jeremy loves 80’s music.  I can’t blame him, it was some good stuff!  He showed this to me a couple of days ago and I have been listening to it pretty much constantly ever since!

Running on Fumes

Good morning!  I hope everyone’s week is going well so far!  For most it’s half over, for me, today is Saturday!  YES!  But like most Saturdays, I have a long list of to-do’s Thumbs down.  I pray today goes smoothly and I am able to get it all done!  I should make a list of my lists.  Thankfully, I have “Baby Daddy” Winking smile home to help!

Yesterday was…..a struggle to get through.  I started out feeling great, as I normally do, but by 2 pm I was worthless.  Tuesdays end up being like that some weeks.  With Jeremy’s schedule I feel like I am running a marathon sometimes.  By Tuesday I am running on fumes.  Aidan is going through a challenging phase right now and I am so ready for him to work through whatever it is he is trying to figure out.  I am relying on MUCH grace these days.

I had my oatmeal, got the boys ready and to school, got the house cleaned up from the morning rush and then headed out the door for an incredible run.  It was SO beautiful outside.  As I was trotting along I saw several patches of bluebonnets,


they sky was the most vivid shade of blue, the breeze was cool, the sun was bright.  It was a perfect day for a run.  I wish I would have gone back to take pictures of them but my hunger said Oh heck no girl, you are going to feed me!  I am for sure going back today.  They are reason #49583 of why I love Texas!

I completed 5 miles yesterday and was going to do the Tone It Up workout of the day but never got the time.  After my run and a long stretch out, I needed to get something quick to eat because I was running out of time before I had to go pick little A up from school.

I quickly showered and then had to find something I could eat on-the-go.

  • 1 frozen banana
  • 1 cup frozen mixed berries
  • 1 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1 tbsp. chia seeds

I swear every time I make a smoothie, it’s the best smoothie I have ever had.

On the way home from school, I could barely hold my eyes open.  It was all I could do just to make it home.  I had thought of going back to the bluebonnets but all I wanted to do was get in the house and lay down.  I was able to rest for about an hour before Luke got home from school.  When I got up I was feeling even worse….blergh.  I knew exactly what I needed.

I started to feel 100% better within about 15 min. &  was able to power through the rest of the day.  Thank you SPARK!

Dinner for the boys took some imagination but this is what I came up with.

Annie’s Mac-N-Cheese, leftover Easter ham, and frozen broccoli.

I prepared two boxes of mac-n-cheese, about 2-3 cups of chopped ham, 3 cups of frozen broccoli (cooked on stove and FINELY chopped) then mixed it all together in one big pot.

I have to say I am quite proud of myself because I honestly can not make anything without a recipe.  I told Luke what was for dinner and he looked at me like “why you gotta be ruining perfectly good mac-n-cheese with BROCCOLI?” But they both really liked it!  Win for Mom!

1 1/2 cups mixed greens, 1 oz. peanuts, 14 almonds, 1/2 cup blueberries, 7 baby carrots, light string cheese (sliced) & light balsamic vinaigrette.

It took 1 hour to clean up the kitchen…..which included having to mop around Aidan’s chair because he was goofin off and knocked his bowl off the table.  There was mac-n-cheese ALL over the floor.  GRACE, GRACE, and more GRACE!  I don’t think I have ever been happier to see my husband’s handsome face walk through that door.  Sweet relief.  After dinner,  I found a few new recipes to try next week & made a grocery list.  I also had a snack

I’m not sure but I think as soon as my head hit the pillow I was out like a light.

I hope the fatigue Mrs. Murphy brought along yesterday has packed it’s bags.  I am feeling really great this morning, I pray it lasts.  I am taking advantage of this amazing spring weather and will have another outside run today & HOPEFULLY also have time for the Tone It Up workout before I go grocery shopping.  Tonight we are going to church and have something very special planned there!

Coma Naps.

Right after I finished lunch yesterday I could NOT keep my eyes open.  I was looking through a magazine and I felt so tired and a bit disoriented.  I think with Jeremy being off, my body was saying, “Hey girl, it’s time to take a load off, SLEEP NOW.”  I laid down on the couch and the next thing I knew, Luke was walking through the door, home from school.  I had slept like a rock for 2 hours. This got me thinking about how important sleep is and I wanted to share some things I have learned over the past few years about it.

About the hormones Leptin and Ghrelin.

“Sleep affects the levels of several hormones in your body. Two hormones that play an important role in stimulating and suppressing your appetite are leptin and ghrelin. Leptin is produced by your body’s fat cells and is responsible for suppressing hunger. Ghrelin is released by your stomach, and stimulates your appetite. Lack of sleep lowers the levels of leptin in your blood and heightens the levels of ghrelin, which results in an increase of appetite. The reverse is also true: getting enough sleep decreases hunger and will therefore help you lose weight.”   fitday.com

About Cortisol.

“Getting eight hours of sleep at night helps you lower the cortisol levels in your blood, while lack of sleep raises your cortisol levels. Higher levels of cortisol lead to a lower metabolism. I have also read that the body views lack of sleep as stress and therefore it produces cortisol.

Sleep is so incredibly important.  One of the things I have learned how to do is to distinguish whether or not I am hungry, or just need a nap.  Most of the time I am just in dire need of a nap.  Being up from 5am until 9pm or later is a LONG day.  I need a little rest in the middle and so do most people.  Unfortunately, not everyone CAN.  That’s why making sleep a priority is really crucial in weight loss,  as well as maintaining it.  In today’s society, we are encouraged to sleep less and work more.  There are never enough hours in the day. That kind of pressure takes a toll on our nervous systems, making us susceptible to a myriad of health problems. I would really encourage you to take the steps to make sleep a priority in you life.  It can make all the difference.

I was definitely feeling my lack of sleep from the get-go yesterday.  I DID NOT want to get up.  I must have sat on the bed for ten minutes before I finally made myself get up and get going.  I know that if I don’t get a head start on everyone, it sets a negative tone for the day.  I was trying to answer an e-mail at 5:30 am yesterday and trying to put my thoughts together was like a car that won’t start. Finally my first cup of coffee kicked in and I was able to finish it, hopefully intelligently.  By the end of my quiet time, I had drank 3 cups of joe.  Coffee cup

Breakfast was my usual and then it was time to hit the gym.  I planned an hour of elliptical work and thanks to the latest Fitness Magazine, it went by pretty quickly.  I wore my heart rate monitor just so I could make sure I wasn’t phoning it in.  When I run, I have no problem getting my heart rate up, but the elliptical takes a little more effort.

This would be proof that you shouldn’t really pay any attention to how many calories the machine says you have burned.  I even entered my age and weight.  Confused smile

By the time I got home it was after 12pm and I was super hungry!  I snacked on an apple and a few almonds (7 to be exact) while I was figuring out what I wanted.

I intended on going to Ulta right after lunch but proceeded to take a coma nap for 2 hours.  I had two coupons that I needed to use by Friday so I went when I got up instead.  Ulta is like the Mother Ship calling me home.  Every time I walk in there I hear angels singing.  I walked around smelling all the delicious scents and looking at make-up.  It was glorious!  Thanks to my coupons, I got some really good stuff.  I went in for foundation primer and a large round brush.  I got those things plus a free tube of lipstick and a free bottle of conditioner.  Bonus: the brush I wanted was half off.  HOLLA!  Side note: I totally recommend Ulta’s foundation primer called Fabulous Face.  It is half as much as the other primers and works so well.  I swear when I put it on, it looks like someone has gone over my skin with Photoshop.  It smooth’s fine lines & evens skin tone.  I wear it everyday whether I wear make-up or not.

I made Crock Pot Sante Fe Chicken from the blog Iowa Girl Eats.  Can you tell I was craving Mexican Food last week when I made the menu for this week?  I served the mixture on white corn tortillas with reduced fat shredded cheese, a little bit of light sour cream, & fat free refried beans.  I have a secret love affair with my crock pot.  I love throwing together everything in the morning when I am at my best; before the exhaustion of the day takes over and I just throw in the towel.  My poor kids have eaten so many sandwiches and bowls of cereal for dinner.  What am I talking about, poor kids.  They would live on cereal and sandwiches if I let them!

This dish was good.  I think I like the other recipe better.  The chicken was a bit bland and sort of dry for some reason.  I think I should have made sure it was submerged in order to better soak up moisture and seasoning.  It made a lot and to that I am thankful.  I love to cook, but I don’t necessarily like to cook at dinner time.  Winking smile

Mrs. Murphy, my frienemey

Yesterday was a lovely & relaxing day.  It was Jeremy’s first day off for a few days and it was so nice not having a million things to do.  I actually got a nap in which was perfect because Tuesday’s culprit in the funky mood I was in was causing some painful issues.  Thumbs down Darn you Mrs. Murphy.  I am glad you have graced us with your presence.….now go away.

I need a napvia

Getting up wasn’t too bad, even though the coffee I drank around 6 on Tuesday night had me up sort of late and up every hour through the night to use to restroom.  I know better.  I knew I shouldn’t have drank it when I did.  Why didn’t I get decaf?  I normally get decaf.  Is it just me or do other women experience memory lapse when Mrs. Murphy comes to stay with them?

Yesterday morning, I kept misplacing Aidan’s comb trying to get his bed head under control, to the point where I felt like crying!  At one point I had left it in the closet.  What was I even doing in there?  I am supposed to be fixing my child’s hair!  Confused smile  I also tripped when I stepped up onto the treadmill. Thankfully, Jeremy was getting on the one next to me and I had someone to laugh with instead of trying to play it off.  You know, laughing to yourself like, “Oh….silly silly me.”  Secretly pretending no one saw you.  When you know in fact ….EVERYONE saw you.

Anyway…..onto what’s really important.

The NEW usual

I am in love with my new bigger breakfast.

My workout was ok.  I wasn’t feeling fantastic but knew I needed to do it anyway and I would feel better.  I decided to take it a little easier than a normal Wednesday.  I did my Basic Lower Body Workout and then I did 20 minutes on the elliptical.  Today, I really liked doing the weights first because I feel like I was able to lift with better form.  Normally I would have run for 30 minutes before.  There are lots of different theories and opinions as to whether you should lift weights before or after your cardio.  I don’t know which is the better one. I just prefer doing the cardio first.  It’s hard and I like to get the hardest part over first.  After today, however; I think I will start doing weights first on leg day.

I did find out one piece of very important information & this is why I love the elliptical….Nick & Vanessa Lachey are having a BABY!  Cute.  I am still in mourning over him and Jessica though.

I cut some up some white corn tortillas, sprayed them with my Misto, and placed them in the oven @ 425 degrees for 8 minutes.  They were perfect.

These are cinnamon tortillas I found at Kroger a few weeks ago that I had tucked away in the freezer.  Perfect for tonight’s dinner.  I baked them the same way as the corn tortillas.

I think this was probably one of the best dinners I have had in a long time.  I do love me some Mexican Food.  I can’t really eat it in restaurants anymore so it’s nice to enjoy a healthy version of it at home.

Today is normally our Date Day but since Aidan is on Spring Break, he gets to join us!  He is very excited and feels super important!  Winking smile We are going to see The Lorax, have lunch, do a little shopping, and visit a cupcake shop!   It’s going to be a great day with two of my favorite boys!
