After my ONE….yes just one cup…..of coffee, I made some breakfast.

Steel-Cut Oats

1/4 cup steel-cut oats

1 cup unsweetened almond milk

1 tbsp. Jif Natural Peanut Butter

1 tsp. ground flax seed

1 tsp. honey

When I first made steel-cut oats I didn’t know that they don’t cook like regular oats.  I am telling you that if it weren’t for Google, we would be eating out of boxes forever.  I tried to make them like my regular oats.  Oh no, not the same…..


Fun With Cats…..

Isn’t this just ridiculous?  I took Trixie in for grooming yesterday and they brought her out with this thing around her neck.  I ended up putting it around her belly like a skirt because it was huge around her tiny little neck.  So this morning I thought it would be fun to put it on Rya.  The funny thing is that she just walked around like no biggie.  I am more than sure she is thinking “I hate you so much right now.”  I love you too huss.


I have a lot of people ask me what I feed my kids, how do I feed them, how do I get them to eat healthy food, etc..  The answer is simple.  I provide healthy food for them.  If they don’t want it, I don’t make them eat it. But the only other option is a peanut butter and jelly sandwich.  I used to send them to bed hungry but I never could get right about it.  Then one morning Aidan woke up not feeling well and as he went to sit at the kitchen table for breakfast his hands and legs were shaking.  After he ate breakfast he was fine.  From that point on I decided to never let them go to bed hungry, but if they don’t eat what I make, all they get is a sandwich, nothing else.  Whereas if they ate my dinner they’d get a bedtime snack of a piece of fruit or a granola bar, bowl of cereal….

So what do I pack them for lunch? Some combination of the following:

  • Sandwich on whole wheat bread – turkey and cheese, natural peanut butter and all natural jelly or honey.
  • all natural yogurt such as Simply Go-Gurt or Trix.  Believe it or not they are making an all natural one. The kids love it.
  • pretzels
  • baby carrots
  • string cheese
  • unsweetened applesauce
  • fruit
  • goldfish
  • water (for Luke)
  • 100% apple juice for Aidan
  • Sometimes a Quaker granola bar if we are short on options

That’s pretty much it.  I am not one of these mom’s who packs spaghetti or quesadillas or hummus wraps.  They wouldn’t eat that anyway.

Today I needed to go shopping for a new workout top to wear on Friday for my super exciting thing that’s happening.  I can’t wait to share the news.

I was able to find two awesome shirts on sale at Marshalls and Target today! I will be outside and you never can trust the weather report in Texas to be accurate.  To be safe I bought a thick one and a light one. I love the lighter blue one because it has has thumb holes and a light fleece lining.  The darker one has a super cute ruching on the neck and cuffs as well as a hood.

After Marshalls and Target we headed to Chick-Fil-A for one of my favorite lunches.

Side salad, sunflower seeds, berry balsamic vinaigrette, and a small fruit cup dumped on top.  Delish!

After lunch I had a cup of Celestial Seasonings Gingerbread Spice tea with a tsp. of honey.

Since the cleanse I have stopped eating sweets after my meal, actually stopped eating sweets all together.  Even though the cleanse really helped with the cravings, the habit is still there.  How do you get rid of a bad habit?  Replace it with a good one!  So I have been making a cup of herbal tea before my meal.  While I am eating, it’s cooling and ready to drink when I am finished in place of dessert.  It’s warm and comforting.  It signals my brain that the meal is over.  It also fills me up if I am not quite feeling full yet.


So I have this crazy thing about weird and fantastical chotchkies.  I wish I could have a little closet full of them.  I love them.  The best place to find them are TJ Maxx, Marshalls, and Ross.  Lucky me, I frequent those places often!

I found this little gem today!  I couldn’t stop staring at it.  I am so fascinated by this one’s moobs.  The nipples were sharp!!!!!

I guess it’s about time

that I finally post something!  It’s been a full summer thus far but I think it will be slowing down here in the next week or so.  Luke is going to be going to his dad’s for the month of July beginning Friday so it will be just me and Little A most of the time after that.

Last week the boys went to stay with Jeremy’s parents for the week.  On Monday we met at Chili’s, had lunch (I got a cup of the Chicken Enchilada Soup, so YUM) and then we drove back to Dallas…..alone.  It was so quiet that it was just plain weird.

We had planned to get some things done Monday afternoon when we got back into town but I was so tired by the end of the drive and had a headache from reading in the car.  All I wanted to do was lay down.  So I DID!  It was glorious!


Tuesday we got to go somewhere that I had been wanting to go for a really long time.  The last time I went to the Allen Outlets was a few years ago and I only got to go into one store.  Jeremy and I made a day of it and got there first thing!  We shopped around a while, finding nothing and getting hungry so over lunch I devised a plan of attack!

I circled and labeled all the stores I really wanted to go to and when we got back we started on one side and worked our way to the other.

FINALLY,  I found the first of many purchases at Kenneth Cole.  I love the tagline on their shopping bag….Everyone Needs an Outlet.  Yes, and shopping is one of mine!  Thank goodness for Jeremy’s sake I am a bargain shopper.

I couldn’t believe I found these, they look almost exactly like my ones from Target!  These are better because my Target ones don’t have the braid over the ankle and my heel slips off the back when I walk.  These feel much better made although I have a blister on my big toe now.  It’s ok…they are cute enough to endure the pain!  Winking smile

I asked for no tomato and mustard instead of mayo….I guess they heard no tomato sub lettuce, no mayo sub lettuce.  Either way it was really good!  I ate half the soup and half the sandwich and it was a perfect portion for me.  I hate the huge portion sizes they serve at restaurants.  It’s so hard to leave half on my plate even though I KNOW that even just half is usually too much.  I think every time…..such a waste, there are people starving.

I LOVED this movie!  I love it so much I want to buy it!  It was adorable and honestly, who doesn’t love Bradley Cooper?  If you don’t, you should see someone.  I want to watch it again.

This was REALLY good.  I ate half the oatmeal,  half the croissant and all of the fruit.  It was perfect and filling.

Then we caught the matinee of Snow White and the Huntsman.


Love, love, loved.  It was freakin loooooong but I had no clue.  This says a lot because I have the attention span of a 5 yr. old.  I think Kristen Stewart did a great job.  Clearly she has had some acting lessons since her Twilight days.  Charlize stole the show for me though.  Evil Queen indeed!

I had on a cute top under this jacket….but since I get cold if its 85 degrees and there is a breeze, I turned into a fashion DON’T before our movie.  Good thing we were in a dark theater.

We decided on lunch at the Chick-Fil-A in the mall.  It was 2 pm and I was getting hangry.  So I figured it would be a good idea to get something quick.

We found a sunny spot to thaw out under and enjoyed lunch.  I got my usual side salad with fat free honey mustard.  I added all the sunflower seeds and croutons.  This time I decided to add my fruit cup on top instead of eating it separately.  I didn’t like it as much…I don’t like the honey mustard on my fruit.  I think I will do this next time but change my dressing to the vinaigrette.

Jeremy made me do it…..but really, it was inevitable.

I didn’t eat it ALL…..just about 3/4!  It was REALLY good, but as expected not as life changing as I had imagined.  I could totally make this at home and in fact, have made something like this before with plain M&M’s, granola, raisins, and some sort of cereal.

That night I got to watch the week’s episode of Dallas!!!  I am so excited to have a new show to watch!!!  I never really get attached to a series because I never have time to watch them.  But this is appointment television for me!  Scandalous!  I vaguely remember the show from when I was little, but I want to buy the original series and watch all of them!!!


I can’t really remember what we did Friday, but I DO remember dinner!

In Time

In Time

Great storyline, just waaaaaaay toooooo long.  I fell asleep but was rudely awoken several times by sounds of gunshots. Thumbs down  I’d recommend it, just know it’s really long.

I just remembered what I did Friday. Confused smile DUH!  Jeremy worked his extra job so I had the day to myself!  I slept in late, cleaned the house a little and then went to exchange some things from Ulta & Target.  By Friday I was REALLY missing the boys.  I was honestly sort of depressed.  It’s funny because when I said goodbye to them on Monday, I thought….gee I am not sure 5 days will be long enough.  Clearly….. I needed a break.  By Thursday I was getting pretty bummed and by Friday I was just depressed.  I really missed my little boys.  It was so incredibly quiet Friday morning.  The energy they give off is tangible.


Finally FINALLY it was time to go get them!  The drive there seemed endless.  We met again in Abilene and ate lunch a Chili’s.  I had the chicken enchilada soup again!  So YUM!!!!

I am so glad they are back.  We all slept late this morning and had a great day today!  Fussing, complaining, fighting and all!  It was music to my ears. Tomorrow is back to reality and a regular schedule.  I hope the treadmill doesn’t kill me after a week of ignoring it!

Last night before bed I thought I would whip up something I had seen on one of the blogs I like to read.  A breakfast cookie.  It sounded interesting and I knew I would probably be in a rush to eat something this morning before church.  This sounded perfect!

It was really good.  I don’t know what I expected but it was not what I expected.  It was a lot like over night oats.  There was no reason to spread it out onto the plate, I could have just eaten it out of the bowl.  Although it wasn’t very filling,( I had to have a banana too) it was really good and I will definitely be making it again!

Church today was really good.  I have to admit I was having a hard time following our Pastor’s message but when I went to my class and we discussed the lesson there, I had a few A-HA! moments.  Great lesson today.  I usually volunteer with the 2 yr. olds in the nursery but today they needed someone to help with the newborns so they asked me.  Um….YES PLEASE!  They were so sweet and adorable.  The girl I was volunteering with asked if I was going to have more kids and I said NO WAY!  I love kids and I love my kids but….yeah….she didn’t seem to understand.  Winking smile She also was very confused when I told her I had a 10 yr. old.

“You don’t look old enough to have a 10 yr. old.”

“Yeah, I get that a lot.”

…..stares at me.

I smile…..

Most of the time they will ask how old I am.  She didn’t and I am sorry, but her confusion was entertaining me, so I didn’t offer my age.

My favorite kind of day

I was up at my usual time this morning thanks to a fantastic nights sleep.  By 7am I had had my quiet time and coffee and was ready to start the day.  The rest of the house was still fast asleep so I decided I would eat a banana and go for a 5 mile run.

My run felt incredible!  It was gorgeous this morning.  I tried my best to take it all in because I know my days of running in the morning are numbered.  By 8 am I was a sweaty stinky mess. I could have gone for an additional 2 miles but I knew I still needed to eat breakfast and get ready for our outing later.

Weight Watchers Chicken with Fresh Tomato Sauce, 1/2 cup Brown Rice, & 4 oz. Moscato

This was SOOO yummy!  I wasn’t crazy about the chicken as usual, but the rest of it was so wonderful.  I gave Jeremy half of my chicken and ate all the rest.

Then I had two pieces of Jamie’s bread….this batch will not last long! Winking smile

I had such a wonderful day today.  Full of my favorite things.  A really good and long quiet prayer time, coffee was superb, an exceptional run, fun with little A, baking, cooking a healthy meal for my guys, and I will end it with some reading….as long as I can keep my eyes open! We have a long day planned for tomorrow so I better try to get in bed ASAP!

Productive insomnia


I learned a long time ago that if I am laying awake in the middle of the night for more than an hour, I might as well get up and get something done.  I never got a chance to sit and post yesterday so I think this is the perfect opportunity.

I had a new breakfast!  It was really good and kept me full for hours and hours.  All the way until almost 1pm!

Two things that I loved about this breakfast.

1. I LOVE the “traditional” version of Greek yogurt.  Traditional as in not fat-free.  It is only 40 more calories and while it does have more fat in it, it’s healthy fat.  I think this is why I stayed full for so long yesterday.  I got a lot of healthy fats in early.  The key lime flavor was divine and the consistency was much thicker and creamier.  It was like dessert.

2. I am in-love with Sunbutter.  In-love as in I spread the measured tablespoon on my bread and then almost always, ok always, get a little extra from the side and lick it right off the knife.  And you better believe I am licking that measuring spoon clean.

I absolutely did not want to go workout yesterday.  I had several things I needed to take care of yesterday morning and lost track of time.  I like to get to the gym by 9:30am but yesterday it was almost 11am before I got there and it just threw me off all together.  I told myself to just do at least 30 min. the elliptical.  The hardest part sometimes is to just get going.  If I can do that much, I start to get a little mojo going and will do a full hour.   Sometimes 45min then some strength training.  That was not the case yesterday.  I could not WAIT to get off that thing.  So 30 min it was.  I also knew if I didn’t start my week off with a workout, it would set a negative tone for the entire week.  So, it wasn’t great, but at least it was something & better than nothing.

I had a few more errands to run, so I got those done after my short workout and then went home for some lunch.  While I was prepping, I had 1/2 cup of Goldfish <—- need to be careful with these, they are a major trigger food for me.  Who can resist those cute little things?

Salad w/ 1 cup baby spinach, 1/2 cup cucumbers, 1/2 cup red and green bell peppers, 2 tbsp. peanuts and 1 tbsp. light vinaigrette.

I ended up not eating the apple.

My afternoon was pretty uneventful, I did get to finally get my hair trimmed though.  I was *thisclose*  to getting it cut pretty short, well, short for me.  But I told her how I was feeling and she made it look 100% better without cutting 4 inches off!

Speaking of hair issues.  On Saturday, I did something strange.  I put mayonnaise in my hair as a deep conditioning treatment.  I have always been curious about it.  People swear by it. But I don’t like mayonnaise and never have it on hand so therefore have never tried it.  I had some left over from a broccoli salad I made a while back and just before I was going to throw it out, I had the bright idea to try it out in my hair!


THIS is what I used.  Mayonnaise AND olive oil?  Perfect hair conditioning combo.

The results?  It was awesome. I am not sure if I prefer straight olive oil.  I like the mayo because it was MUCH less messy.  It seemed to make my hands really soft too.  I think I will try it a few more times to see how regular treatments work.  Luke was really freaked out by the fact that I was putting mayo in my hair.  When I showed him how soft and shiny it was after I had washed and blown it out, and that it in fact did not smell like mayonnaise, he was mesmerized.  I can’t even describe the looks he gave me.  I don’t need words from the child, his facial expressions say it all.  Oh darling, you don’t know the half of it.…this is just a sample of the crazy things women do to be beautiful.

Dinner was lackluster.  The past few nights I have been in an in between zone of not hungry but could/should eat something otherwise I will be starving at bedtime.

A Good Good Friday


Good morning friends!  I hope everyone is having a lovely Easter weekend.  I love Easter.  I love what it represents, I love all the beautiful pastels and pretty clothes.  I love the feeling of renewal that it brings.  What I love MOST is that I can now wear white!  Yes, I am ashamed to admit that I scoff at those who wear white all year round.  Do they not know the rule?  No white after Labor day until Easter?!? I know, I am awful.

I am going to have to make this a quick post as I slept in until almost 7:30am and I have to get my day started a.s.a.p.

Breakfast yesterday, was my oats at about 8am.  I like to note the time, because it is interesting to me how long it takes to get hungry again after eating different types of food.  The oats made a HUGE difference yesterday.  I could really feel the difference all day.  While I didn’t really feel like going to the gym, I didn’t feel like working out at all, I ended up have a really great run on the treadmill.  I lasted an entire hour.  I did some intervals, some slow jogging, some sprints.  I did what felt right.  I knew I needed to spend an hour so I didn’t push myself too hard but I stayed steady.  Slowing when I got tired, speeding up when I felt recovered.

When I got home at about 12:45pm, I wasn’t really hungry yet so I snacked.

When Jeremy got home from his extra job we went to Target for some groceries to make Easter Dinner & we all got new pairs of shoes!  The boys got flip flops and I got a pair of sandals. That’s another thing I love about Easter, new shoes!  Afterwards we picked them up a pizza for Pizza Night.


I made a salad around 6pm.

Baby Spinach, baby carrots, honey roasted peanuts, a slice of pepper jack cheese (diced), grapes and light vinaigrette.

I also cut a tiny sliver off a regular slice of pizza.  Oh my word it is so good.  I could totally go overboard.  I remember when I would scarf down 3-4 slices.  *YIKES*  Even though I was hungry, I wasn’t ravenous.  It’s all about the oats!

I also made some cupcakes.  They have a cream cheese frosting that you have to frost right before eating.  There are 24 of them so I didn’t frost and decorate them all.  I decorated two for Jeremy and I (Aidan wasn’t interested) and then immediately ate them.  Taking a  picture was an afterthought!  I will definitely be sure to capture them tomorrow!  They were delectable!

I have to note what Aidan said about the cupcakes.  I swear this child teaches me so many things.  He has been better than therapy at times.

Me: “A.J. you want to try a cupcake?”

A: “Sure!” ~takes a bite~ “Mmmm good!”

Me: “Do you want one of your own?”

A: “ummm, no, they are good, but no thank you!”

How precious and polite.  I need to remember that.  “These are good, but no thank you!”

Well, I am off to get ready for a soccer game, a picnic and a birthday party!  I hope everyone has a blessed Easter!



I found….my shoes.

I FINALLY found a pair of wedges that I love!  And they weren’t $40 either!  I found them at Ross for $18.99, normally $45.  I’m sorry, but I think I could win an award for finding deals.  I think it might just be a God-given talent!  I’m going to wear them tomorrow so I will show them then!  I’m so happy, they are just darlin’!


I ran out of almond milk yesterday morning! Sad day! So I had to find something else to eat besides my beloved oatmeal.  I thought about re-creating Tuesday’s breakfast but I didn’t want to take all that time, dirty up all those dishes and it was a too little heavy to eat that early and so close to gym time. Instead,  I made an old stand-by.

It was good, but it didn’t satisfy me or fill me up the way my oats do. Thumbs down It also affected my workout and I was ravenous afterwards.

I was SO sore yesterday morning.  My hips, my hamstrings, lower back, derrière.  I thought a nice easy elliptical workout would be perfect.  So my workout looked like this.

Afterwards we went over to stretch-out for about 15 min.

I totally phoned it in yesterday.  I was super bored even though I had 3 magazines.  I thought about switching to the treadmill about halfway through but I knew I needed to give my legs a rest.  I felt like I was working hard but my heart rate was at minimum the whole time. The only time it got up where I like it to be was while I was at level 12 and I sure as heck wasn’t staying there the whole time.  It’s ok though, some days are just like that.  I blame it on my breakfast!  Today is a rest day so I know I will have a GREAT workout tomorrow.

We had to run to the bank after the gym and the whole time I was thinking about what I was going to eat for lunch!  THEN Jeremy needed to stop by Kroger….I was like OH MY GOSH get me home NOW…..You won’t like me when I’m HANGRY!  He was so sweet though, he wanted to buy some flowers!  That made me forget about how hungry I was!  I will wait until they open up a bit before I take a picture of them!

When we finally made it home, I made a beeline for the kitchen.

Orowheat Sandwich Thin w/ Hormel all-natural turkey and 1 slice of Sargento reduced-fat Colby-Jack cheese pressed in my Panini Maker.  Salad w/ a handful of baby spinach, carrots, grapes, 14 almonds, 2 tbsp. Athenos reduced-fat feta cheese & 1 tbsp. Kraft Light Sicilian Roasted Garlic Balsamic Vinaigrette.

After lunch I had a Quaker Chocolate Chip granola bar.

I spent the afternoon shopping for Easter stuff.  Found my shoes, did not find something cute for Aidan to wear, nor myself Thumbs down.  Did not find shoes for Aidan & did not find the toy he wants so desperately that he won’t stop talking about it.  I guess after our fun Dentist Date today we will look some more.

Zone Perfectly Simple in cranberry almond.

When I got back from shopping, I put together Easter eggs for Aidan’s party at school today.  Don’t ask me WHY I chose my absolute favorite candy of all time to put in those eggs. Ok, I’ll tell you.  #1, I had a coupon if you bought two and #2, I need a bag for the topping on some cupcakes.

Then I sliced up some of the best tasting Cara Cara oranges I have ever had, for his party as well.  Note to self: pick up many many Cara Cara oranges from the grocery store this week.

The boys ate sandwiches before they were off to soccer practice and I made myself this:

A repeat of my sandwich at lunch and my favorite….POPCHIPS!  I usually steer clear of these because I have eaten an entire full size bag in one sitting before. Can you say “Trigger Food”?  They had the small 8 oz. bags 2/$1 so I grabbed two.

I then had another Quaker Granola Bar for dessert…..my sweet-tooth was bugging me yesterday.  Thankfully today is TREAT DAY.

This morning Jeremy and I have dentist appointments!  JOY!  Then we are definitely going to eat at Mimi’s!  Maybe (hopefully) we will get some frozen yogurt too! Or ice cream or a cupcake, or a bag of M&M’s….One can dream!

Yesterday was scary.  Like, hiding in a bathroom scary.  More on that later.

It was Pajama Day at Pre-School

He is just too much!

I didn’t have time to eat breakfast before I took Aidan to school so I ate when I got back.  Surprisingly, I was not craving oatmeal!

I started to scramble up two egg whites. The yolk of one fell into the bowl so I scrambled up 1 egg white and 1 whole egg.  I put half the eggs on an Orowheat Sandwich Thin along with 1 slice of reduced-fat Colby Jack Cheese and 1 Morningstar Sausage Patty.  Then, I grilled it in my Panini maker.  On the side, I had the other sausage patty and the rest of the eggs.  This was SO delicious.  I am such a huge fan of bigger breakfasts.  I ate this a little later in the morning, around 9:30, and it really helped my hunger levels the rest of the day.

Even though I got superb nights sleep, and had 3 cups of coffee (not because I was tired but because I just love it), I found myself completely exhausted by 10am (probably a caffeine crash). I had gotten up as usual, had a great morning and then out of no where my energy plummeted.

After breakfast, I got the house picked up from the morning rush and laid down on the couch in complete bliss as I relished the absolute quiet of the house.  I thought, “Ahhhhh, I can sleep as long as I want.”  I reflected on a time not so long ago when I hadn’t slept in days/weeks.  I would find myself sitting or standing there rocking my crying baby, as I, myself was also crying.  Him for whatever reason, me from utter exhaustion.  When I say I am exhausted now, I really shouldn’t use that term.  Ever.  I am just a little tired.  Back in Aidan’s infant days I would day dream about a day that I could sleep anytime I needed to.  I was in bliss yesterday as I had realized that day had come.

Even though I could have slept for hours, I didn’t.  I didn’t want to sleep my special day away.  I took a 20 min power nap to take the edge off and then got up to deal with Bob.  I regret saying I was going to show him who was boss because he was the one owning me yesterday.  I went into it with complete confidence because I did so much better last week.  Yesterday,  I was dying.  I managed to finish it the best I could.  I can say I didn’t phone it in at any point, but it was brutal.  I couldn’t even finish the last squat jumps.  I just stood there, hands on my hips, slouched in defeat saying out loud “You’re killing me.”

So all the while I am doing this workout, the tornado sirens are going off and my phone is blowing up.  I am trying to concentrate on not dying and am being distracted by why in the world the sirens would be going off as well as my phone.  While I am doing lunge #32094, it’s getting darker and darker.  I notice the wind is picking up.  I quickly go over to my phone and Jeremy had sent me about 4 texts saying,  “Um HELLO?!?!  There is a tornado in  -“my city”- and you aren’t answering.  Please tell me you are ok.”  I quickly replied,  “Yes” and I got back to my lunges.  #DEDICATED.  Honestly I only had a little bit left.  When I was done, I had about 20 minutes before I had to leave to get Aidan from school.  I turned on the T.V. to see what all the hub-bub was about and well, well, well, what d’ya know….TORNADOS all around me!!!!  Let the freak out commence.  I start thinking a million things. “Do I go pick up Aidan?  What about Luke?  Should I leave? Should I call the schools?”  I put my big girl panties on and left.

I was pretty much starving at that point but didn’t have time to really make anything, so I grabbed my trusty Kashi bar

I’m not going to lie….I was terrified.  I had worn my heart rate monitor out of curiosity as to exactly how hard the workout was & I hadn’t taken it off before I left.  I looked down to check the time & it was reading my heart rate as 109!  This was 20 min later, in the car….When I got to the school, everyone was in the bathroom!  It was so sad.  I felt so sorry for the teachers and the kids.  They were all confused. Confused smile  I asked Aidan why he was hiding in the bathroom and he said “I don’t know?”  His teacher said, “We didn’t go into any details.”  When we left the sirens were still going off and the radio was talking all about these tornados.  At one point, they were reporting one close to where we were driving but it was far enough away that I couldn’t see anything.  Meanwhile, little A is asking me all these questions I don’t have the answers to.  “Mommy, why are you driving so fast? Mommy, why is it so dark? Mommy, is a tornado going to come get us? Mommy where’s Luke & Daddy? Are they safe? What if a tornado gets our house and rips off our roof, where are we going to live?”  All I kept saying was “We are going to be ok, we just need to get home, quickly.”  I don’t know who I was trying to convince of that.  As we were driving back home the sky was turning dark gray, lightening and thunder everywhere. Just as we were pulling into our garage it started to pour down rain and hail.  I immediately went into the bathroom and hid for about 20 min.  Then I had the bright idea of watching the news.  Thankfully the really bad stuff was to the northwest of us.  I couldn’t call out so I had no idea what was going on at Luke’s school, but after an hour Jeremy was finally able to find out that we were in the clear and the school would be releasing the students at regular time.  Whew…..scary stuff!

During the excitement I had a snack.  I was too freaked out and I also didn’t want to make a commitment to a meal if my roof was about to blow off.

1 cup Dole Frozen Fruit – Strawberry Banana Blend

1 cup unsweetened almond milk

1 tbsp. chia seed

1 scoop vanilla whey protein

~ This made a REALLY good smoothie.  One of the best I’ve made. ~

My eating schedule was way off so I ended up having the smoothie and the sandwich thin around 4:30 and that kept me full for the rest of the evening.

I spent the evening getting our schedules organized for April,


looking for Easter recipes, and shoes……Winking smile.  I was thankful to have some Black Bean Burritos stored away in the freezer so the boys had that for dinner.  After baths and stories we ALL got into bed at a decent hour.  I don’t know about them but I was exhausted very tired.



Hello Bob, we meet again

Yesterday, my morning started at 4:20 am when I woke up with a bloody nose……GOOD MORNING ALLERGIES!  *eyeroll*  I tried to go back to sleep but to no avail.  I got up to find that my coffee maker (Jeremy) forgot to get the coffee ready the night before.



He makes MUCH better coffee than I do and all I can manage in the morning is to push the ON button.  I started to get a pot going when he came in and took over.  Knocking a cup of water all over the floor in the process……We both just started laughing.  Hey, it was our Friday, nothing was going to bug us.

Breakfast was my yummy yummy oatmeal and then it was time to get the boys ready for school.  When I got back from dropping A off at school, it was time to spend some time with Bob.

This picture cracks me up.

It was a little, and I stress LITTLE, easier than last week.  It didn’t take me 30 minutes of laying on the floor before I could get up again & I was able to fully function the rest of the day.  I was able do almost all of the reps this time, but I seriously felt like I was going to fall over at some points.  I am REALLY excited to add this into my weekly rotation.


I didn’t have a lot of time to eat so I made something quick.

I went to pick up little A and then made a quick grocery trip.  Luckily, this week didn’t require a detailed grocery project; we just needed a few things.

When I got home, I needed to bake something.  But first I needed a snack…..or two.

 Hershey’s Air Delight – I had two little pieces of LUKE’s candy bar…I was so proud of my self restraint.

I started by baking a batch of Jamie’s Bread.

and then I realized that my ingredients for the Healthy Strawberry Cream Cheese Muffins were going to go bad so I made up a batch of those too.

In this batch I used 1/8 cup Xylitol Brown Sugar Blend, the rest regular brown sugar, and substituted the oil for unsweetened applesauce.  I also remembered to put the wheat germ in it this time.  I added 2 tbsp. of water because the batter was a little thick, and the consistency turned out really moist.

They are really good again, but have a slightly different taste.  Although I have never used wheat germ before, I suspect this is what I am tasting.

Dinner was yummy yummy leftovers.  I baked some more corn tortillas and served the casserole over them.

I set out a couple of muffins to eat right away and then stored the rest in THE BACK of the freezer for a rainy day.  They may be healthier, but they sure aren’t calorie free!

I am not as sore as I was last week after Bob’s workout, but I am sore, so I am planning an easy 45-60 min elliptical workout today. I have about three magazines I need to read.  Who ever said that you aren’t working hard enough if you can still read a magazine, clearly has never done the elliptical on level 10 for 30 min….just sayin!



Of note:   I am starting to think that my lack of appetite is not a lack at all.  I think it is actually a normal appetite. This is something I have never really experienced.  All of my life I have had a hunger for something more, a need, and I have filled those holes in my life with comforting foods. During my dieting phase, I was always either constantly slightly hungry, or stuffed. Never just satisfied and comfortable. I am starting to connect the dots with all of the small changes I have been making to my diet and in my behaviors. I was MUCH less hungry yesterday than I was Monday. On Monday, my breakfast was a sorry excuse for one and I paid for it later. Yesterday, I had a big breakfast, with a tablespoon of chia seed and my appetite was back to normal. It has been a real challenge for me to adjust to maintaining. The weight loss was easy in comparison. Maintaining it is the real challenge. I feel like I have just now taken the training wheels off and am on my own.  Breaking free from calorie counting and constantly weighing myself, to just focusing on honoring my hunger, respecting my fullness and making healthy food choices; the right combinations at the right times. It is still a challenge for me to not loosely add up how many calories I have eaten. I do it because it makes me feel safe and in control. I feel like I am learning to trust myself for the first time. It’s going to take a while, but little by little we will get there.

Mrs. Murphy, my frienemey

Yesterday was a lovely & relaxing day.  It was Jeremy’s first day off for a few days and it was so nice not having a million things to do.  I actually got a nap in which was perfect because Tuesday’s culprit in the funky mood I was in was causing some painful issues.  Thumbs down Darn you Mrs. Murphy.  I am glad you have graced us with your presence.….now go away.

I need a napvia

Getting up wasn’t too bad, even though the coffee I drank around 6 on Tuesday night had me up sort of late and up every hour through the night to use to restroom.  I know better.  I knew I shouldn’t have drank it when I did.  Why didn’t I get decaf?  I normally get decaf.  Is it just me or do other women experience memory lapse when Mrs. Murphy comes to stay with them?

Yesterday morning, I kept misplacing Aidan’s comb trying to get his bed head under control, to the point where I felt like crying!  At one point I had left it in the closet.  What was I even doing in there?  I am supposed to be fixing my child’s hair!  Confused smile  I also tripped when I stepped up onto the treadmill. Thankfully, Jeremy was getting on the one next to me and I had someone to laugh with instead of trying to play it off.  You know, laughing to yourself like, “Oh….silly silly me.”  Secretly pretending no one saw you.  When you know in fact ….EVERYONE saw you.

Anyway…..onto what’s really important.

The NEW usual

I am in love with my new bigger breakfast.

My workout was ok.  I wasn’t feeling fantastic but knew I needed to do it anyway and I would feel better.  I decided to take it a little easier than a normal Wednesday.  I did my Basic Lower Body Workout and then I did 20 minutes on the elliptical.  Today, I really liked doing the weights first because I feel like I was able to lift with better form.  Normally I would have run for 30 minutes before.  There are lots of different theories and opinions as to whether you should lift weights before or after your cardio.  I don’t know which is the better one. I just prefer doing the cardio first.  It’s hard and I like to get the hardest part over first.  After today, however; I think I will start doing weights first on leg day.

I did find out one piece of very important information & this is why I love the elliptical….Nick & Vanessa Lachey are having a BABY!  Cute.  I am still in mourning over him and Jessica though.

I cut some up some white corn tortillas, sprayed them with my Misto, and placed them in the oven @ 425 degrees for 8 minutes.  They were perfect.

These are cinnamon tortillas I found at Kroger a few weeks ago that I had tucked away in the freezer.  Perfect for tonight’s dinner.  I baked them the same way as the corn tortillas.

I think this was probably one of the best dinners I have had in a long time.  I do love me some Mexican Food.  I can’t really eat it in restaurants anymore so it’s nice to enjoy a healthy version of it at home.

Today is normally our Date Day but since Aidan is on Spring Break, he gets to join us!  He is very excited and feels super important!  Winking smile We are going to see The Lorax, have lunch, do a little shopping, and visit a cupcake shop!   It’s going to be a great day with two of my favorite boys!
