Skinny Mexican Pizza

Dinner last night was inspired by a recipe in my Hungry Girl 200 under 200 cookbook called Spicy Tortilla Pizza Mexicali.

Mexican Pizza (adapted from HG’s recipe)

Makes 7 servings

per serving:  180 calories, 19 carbs, 5g fiber, 6g fat, 14g protein

Ingredients:

  • 7 white corn tortillas
  • 1 package Morningstar soy crumbles
  • 1 can diced tomatoes with green chilies
  • 1 tbsp. lower sodium taco seasoning
  • 1 cup reduced fat shredded Mexican cheese blend.
  • Fat free sour cream (optional)

Directions:

Pre-heat oven to 375 degrees

Spray a skillet with non-stick spray.  Cook soy crumbles with juice from canned tomatoes and the taco seasoning over medium heat until heated thoroughly.  About 10-15 minutes.  Then add canned tomatoes, cook another few minutes until heated.

Meanwhile, bring a separate pan sprayed lightly with non-stick spray to medium heat on the stove.  Cook each tortilla in pan for a few minutes on each side until slightly firm.

Place tortillas on a baking sheet sprayed with non-stick spray.

Put 1/3 cup of soy crumble/tomato mixture on each tortilla.

Top each pizza with 2 tbsp. of shredded cheese.

Bake in oven for about 5-6 minutes or until cheese is melted.

I topped my pizza with 1 tbsp. of fat- free sour cream which added 10 calories.

They were OMG good!


This morning I tried a new-to-me product in called Sunbutter

I used 1/2 tablespoon in my oats this morning instead of regular peanut butter.  I loved it!  Its so delicious. I love nut butters of all kinds, almond butter, nutella, cashew butter, peanut butter.  It’s such a delicious way to get healthy fat into your diet.  Adding healthy fats to your meals helps you feel full and keeps your blood sugar steady.  They also rev up that metabolism helping you to burn fat.  The hard part is to not eat spoon full after spoon full! You know you are a health nut when a spoon full of nut butter = DESSERT!

My workout sans heart rate monitor was awesome once again.  SO glad that workout mojo is back!  I did my 55 Minute Elliptical Workout and added 5 extra minutes on level five for a longer cool down period.  I also have a new favorite workout song, Pitbull “Back in Time”, LOVES me some Pitbull!  I need to get a list together and just buy all the latest and greatest on ITunes. They never fail to light the fire under my britches just when I think I have run out of steam.

  • 4 cups baby spinach
  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped cucumber
  • 7 baby carrots chopped
  • 1 light string cheese stick chopped
  • 1 grilled chicken breast chopped
  • 2 tbsp. light balsamic vinaigrette.

This afternoon I am going to iron and iron and do some more ironing.  Hopefully catching up on some DVR’d shows!  Tonight I am going to take Luke for a haircut and then a dessert date!  YAY for dessert!  He hates getting his haircut but I figure I can ease the pain with some sweets.
